Veggie and Herb Shakshuka

Veggie and Herb Shakshuka

Enjoy our tasty and comforting Veggie and Herb Shakshuka, which aims to make you feel good about eating healthy food. Imagine a dish full of fresh herbs like cilantro, dill, and basil, crunchy green onions, olive oil, and the nutritious goodness of broccoli that looks as bright and cheery as it tastes. These do more for your body than just taste good; they act as a group of superheroes, warding off illness and maintaining your strength.

Now, imagine adding to that goodness with some creamy white beans and a thick, tomatoey sauce made from tomato passata or crushed tomatoes. This isn’t just for taste; it’s for making sure your body gets what it needs, like protein to keep your muscles happy, fiber to keep your tummy happy, and something called lycopene from the tomatoes that’s super good at keeping you healthy.

But we’re not stopping there. We’re spicing things up with garlic powder, paprika, and dried oregano. These spices do more than make the dish taste amazing; they have special powers to keep you feeling great, like keeping your heart healthy and fighting off sickness.

And the best part? We’re topping it off with eggs and a sprinkle of feta cheese. Eggs are like nature’s little power packs, full of protein and other goodies that help you start your day right or end it on a high note. And feta? It’s not just yummy; it’s also packed with calcium for strong bones and probiotics to keep your digestive system running smoothly.

Veggie and Herb Shakshuka

Preparation Time: 10 minutes
Cooking Time: 20-25 minutes
Serving Size: Serves 4

Ingredients:

  • 2 tablespoons olive oil
  • 1 cup green onions, chopped
  • 1 cup fresh herbs (dill, basil, cilantro), chopped
  • 2 cups broccoli, chopped
  • 1 can (15 ounces) white beans, drained and rinsed
  • 2 cups tomato passata or crushed tomatoes
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • 1 teaspoon dried oregano
  • Sea salt and pepper, to taste
  • 4 large eggs
  • 1/2 cup feta cheese, crumbled

Steps:

1. Sauté the Veggies:
  • Heat the olive oil in a large skillet over medium heat. Add the green onions and sauté for 2-3 minutes until softened. Incorporate the broccoli and cook for another 5 minutes, stirring occasionally.

2. Add Beans and Tomatoes:

  • Stir in the white beans, tomato passata (or crushed tomatoes), garlic powder, paprika, dried oregano, sea salt, and pepper. Simmer the mixture for 10 minutes, allowing the flavors to meld together.

3. Herb Mix-In:

  • Add the fresh herbs (dill, basil, cilantro) to the skillet and stir well.

4. Eggs:

  • Create small wells in the mixture and crack an egg into each well. Cover the skillet and cook for about 5-7 minutes, or until the eggs are set to your liking.

5. Finishing Touches:

  • Sprinkle the crumbled feta cheese over the top just before serving.

6. Serve and Enjoy:

  • Serve the shakshuka hot, directly from the skillet. This dish pairs wonderfully with crusty bread or pita for dipping into the rich tomato sauce and runny egg yolks.
